One of my favorite uses for pumpkin is for Yum Yum Brownie Muffins. I got the recipe from Hungry Girl. Super easy, and super tasty. They are really moist and so good! They taste like a cross between brownies and cake. I'm going to try this with a different cake type one day. I think a spice cake would be good.
Why is it that knowing there might not be any pumpkin when I need it makes me want to get up and make a whole lot of yummy pumpkin goodies?
My brother has this ginormous pumpkin in his garden right now. I might have to hit him up for some canned pumpkin once he gets it processed! He estimates it weighs about 75 pounds. Woohoo!
I hope you're able to find some pumpkin for pie making! I've never been much of a pumpkin pie fan, but still it wouldn't Thanksgiving without it.

Is packed pumpkin the same as canned pumpkin? Cuz I saw a whole endcap at the grocery store stacked with 'em tonight. Ohhh, but that was at Whole Foods. Are you saying I won't see them at the other grocery stores? And that I should have loaded up my basket while I had the chance???? ACK!!!! Excuse me.. I gotta go do something!
ReplyDeleteMary Anne - I went shopping yesterday and got 4 cans to complement the 2 cans I already had on hand. Whew! I think I'm safe.
ReplyDeleteNGIP - Yep, it's the same. But they also make pumpkin pie mix in a can, which confuses some people. They had plenty at Walmart yesterday, so I'm starting to wonder if this is all a TRICK to make everyone buy more pumpkin! (But I suggest getting some extra, just in case!) :)
